Cajun Pepper Chicken

Cajun pepper chicken is an ideal recipe is you like a little spice in your chicken recipe. Grilled chicken recipes are always a summertime favorite, but this specific recipe can be made anytime, either on a grill or in a saucepan.

Ingredients

  • 1 1/4 boneless chicken pieces
  • 1 red bell pepper, seeded and halved
  • 2 yellow bell peppers, seeded and halved
  • 4 teaspoons olive oil
  • 1 tablespoon Cajun seasoning
  • 3/4 cup half and half, room temp
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 tablespoons chopped fresh basil

Instructions

  1. Brush peppers with 2 teaspoons olive oil; season chicken with Cajun seasoning.
     
  2. Place chicken and pepper halves (skin side down) on grill 4 to 6 inches from heat.
     
  3. Grill 6 minutes, turn chicken and grill about 6 minutes more or until peppers are tender and juices of chicken run clar. In a small saucepan, heat remaining 2 teaspoons olive oil and garlic over medium heat.
     
  4. Blend in tomato paste and half and half and basil.
     
  5. Heat, but do not let boil. Serve chicken and peppers with cream sauce.

I agree that the freshness of the basil would not shine through being added at that stage in the directions. If you choose to use it, I would add it to the top right at the end. Not only that, but it would turn black and you would have a lot of little black flecks in the sauce. I do love the idea of a Cajun style creamy sauce and will have to try this the next time I grill. I will probably just leave the basil out and put a bunch of chopped fresh parsley over the top right before serving it.

I think you forgot pounds behind 1-1/4 chicken pieces. This is a great recipe for grilling season.If you have a vegetable grate, I would suggest slicing the peppers into strips and grilling them on the vegetable grate. That would make it easier to serve and eat. Boiling the sauce would ruin the freshness of the basil.

This Cajun pepper chicken looks yummy. I love the idea of the Cajun cream sauce. I'm definitely going to make it. I think you could use it on all sorts of things, not just chicken. Imagine it over some lamb? I'm definitely going to start with the chicken though and I'm doing it tonight. I was looking for something to do with my chicken and I've found it!
