Ingredients

  • 1 pound ground beef
  • 2 stalks celery, diced (about 1 cup)
  • 1/2 teaspoon dried oregano leaves, crushed
  • 1 can (10.75 ounces) Campbell's Condensed Cream of Mushroom Soup (Regular or 98% Fat Free)
  • 1 cup Pace Picante Sauce
  • 1 can (about 8 ounces) whole kernel corn, drained
  • 1 cup cup elbow macaroni, cooked and drained
  • Shredded Cheddar cheese, to taste

Instructions

  1. Cook the beef, celery and oregano in a 10-inch skillet over medium-high heat until the beef is well browned, stirring often to separate meat. Pour off any fat.

  2. Stir the soup, picante sauce, corn and pasta in the skillet. Cook and stir until the mixture is hot and bubbling.

  3. Sprinkle with the cheese and cook until the cheese is melted.

One skillet meals are quick and easy to prepare, and are perfect for busy weeknights when dinner needs to be ready as soon as possible. Comfort food is always enjoyed by families. When making this, I would use lean ground beef, Healthy Request cream of mushroom soup, and mild picante sauce. Serve this dish with a tossed green salad, and dinner is complete.

Growing up, my Mum would make a casserole very much like this one. When I make it, I often swap out the mushroom soup for a different kind of creamed soup (I really can't stand mushrooms! Lol. I have found that cream of cheddar soup is super yummy to use as a substitute. As a side note, I have found that the leftovers from this casserole freeze pretty well (The fasta can sometimes get a bit mushy upon reheating, but that has never bothered my family.) This is a very affordable and yummy recipe. I recommend that you give it a try.
