Old Fashioned Lima Bean Soup

This old fashioned lima bean soup is one of my family's favorite leftover ham recipes. We use both the ham bone and the actual ham meat to make a delicious, hearty soup that's perfect for lunch or as a starter for dinner.

Serves: 12

Cooking Time: 1 hr 30 min

Ingredients
  • 1 pound dried lima beans
  • 1 ham bone
  • 2 cans (13.5-ounce) chicken broth
  • 1 can (16-ounce) tomatoes
  • 1/2 teaspoon paprika
  • 1/8 teaspoon cayenne
  • 3 cups water
  • 2 cups finely chopped celery
  • 1 cup chopped onion
  • 1/4 cup snipped parsley
  • 1 cup cubed leftover cooked ham
Instructions
  1. Soak beans in water to cover overnight.
     
  2. Drain beans, then turn into large soup kettle.
     
  3. Add ham bone, chicken broth, tomatoes, paprika, cayenne and the 3 cups water.
     
  4. Bring to boil over high gas flame; reduce flame and simmer, covered, 30 minutes.
     
  5. Stir in celery and onion.
     
  6. Simmer 1 hour longer, or until beans are soft but not mushy.
     
  7. Remove ham bone and cut ham left on bone into small pieces; return pieces to kettle along with parsley and ham cubes.
     
  8. Reheat slowly until thoroughly hot. Makes about 12 servings.
