Low Fat Meatless Baked Black Bean Burritos

Beans, beans the musical fruit. The more you eat, the more you toot. The more you toot the happier you feel, so let's eat beans with every meal! This vegetarian burrito recipe can't be beat, so let us eat!

Ingredients

  • 1 large yellow onion, finely grated
  • 1 can (15 ounce) cooked black beans, drained
  • 1/2 cup (or 4 ounce can) peeled, roasted green chilies, finely chopped
  • 1 teaspoon red chili powder
  • 2 tablespoons fresh cilantro, finely chopped
  • 2 cups pre-cooked brown rice
  • salt and pepper, to taste
  • 8 tortillas made of whole wheat flour or cornmeal
  • 1 cup salsa

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Grate onion into deep mixing bowl.
     
  3. Add beans, previously mashed with fork.
     
  4. Stir in chilies and all seasonings.
     
  5. Spread tortillas on a counter, place equal amounts of spiced bean mixture on each, followed by an equal measure of rice.
     
  6. Overlap all four sides of each tortilla to envelop contents.
     
  7. Set each burrito, seam side down, in non-stick baking pan.
     
  8. Drizzle with salsa or if not available, fresh chopped tomatoes.
     
  9. Bake at 350 degrees F for 15 to 20 minutes.
     
  10. Serve with corn on the cob.
     
  11. Makes 4 servings (2 burritos each).

I enjoy eating black beans, and my family does, as well. This would be a good recipe to try. When making this dish, I would use a can of low sodium black beans, mild green chilies, whole wheat flour tortillas, and mild salsa. The black beans, brown rice, and whole wheat flour tortillas make this a nutritious meal.

Beans are incredibly healthy and once your body is used to eating more of them, they tend not to cause that much gas. I love Tex Mex food and don't eat meat so I'm always on the look out for new veggie recipes. You could make this recipe even more budget-friendly by serving with rice.
