Individual pizzas are always a big hit when I have my nephews over for a visit. It's a classic that I remember eating frequently when I was a kid. You can make them on tortillas, pita bread, english muffins, or naan bread. There are so many options when you think about it. I find that kids like these because they can personalize their toppings. It really helps to keep everyone happy!

This is something else we made for our family movie night, several different Tortilla Pizzas. The children just loved the idea and the youngest wanted to know if we could eat like that every day, lol! This is such an easy way to make a really great Fill Me Up and, because they are quite small, I could try out some more adventurous toppings.

I make thin crust pizzas this way frequently in my household. But the trick to it is really not overdoing it on the toppings. Less is more, since you end up with a crisper crust. For a really crunchy cracker like crust, bake the tortillas first for about 5 minutes before topping. A pan with holes in it can be helpful too. Use your leftover taco stuff for a mexican version, subbing prepared enchilada sauce for the pizza sauce - very yummy!

Tortillas make a great base for all sorts of meals. Using them as pizza bases is such a good idea, especially as they're so light and crispy. You can use them to make a quiche too, just a couple into a flan tin and add the eggy mixture with your favourite flavour.

My family's favorite dinner is to make pizza on naan bread. It's an Indian bread that's soft but can get crispy in the oven. So delicious with veggies, chicken, cheese, sauce, etc that you like! I like this recipe a lot because tortillas make a great, healthy crust, too! Excited to give these a try.
