I love a good make-ahead meal. These egg muffins freeze and thaw very well without losing their delicious texture. They are protein-packed which gives you a nice energy bookst first thing in the morning. I bet you could substitute some bacon for the ham, if you are looking for a different flavour. You can also really change the flavour by trying out different kinds of cheese or sprinkling in some fresh herbs into the mix before baking. A yummy and delicious breakfast!
