Comfort food is popular with families, and is always welcome on the dinner table. Macaroni and cheese is one of those dishes that everyone will enjoy, especially picky eaters. This is a variation of traditional macaroni and cheese recipes since it has diced tomatoes. When making this, I would use butter instead of margarine for a richer taste, skim milk, and no salt added diced tomatoes. The macaroni should be drained while it is still underdone since it will continue to cook in the oven.

My family makes this recipe all the time. It is so yummy and really easy to make. It is actually one of the first recipes that I taught my niece how to make. The technique of making a bechamel is a nice foundation to know for cooking. You might be hesitant to add the tomatoes, but they are so flavourdul and yummy. They add a whole other dimension to the mac and cheese. Sometime I like to add a crumb topping near the end of the cooking time for a crusty treat. It's really very good.
