Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 red bell pepper, diced
  • 1/2 pound sliced bacon, diced
  • 1/2 pound bulk breakfast sausage, or sausage links, cut into pieces
  • 6 eggs, whisked
  • 4 cups frozen shredded hash brown potatoes, thawed
  • 2 cups shredded cheddar cheese
  • 1 1/4 cup shredded Jarlsberg cheese
  • 1 1/2 cup cottage cheese
  • 1/2 cup sour cream
  • Fresh chives, minced

Instructions

  1. Heat oven to 350 F. Lightly grease a 9x13-inch baking dish.

  2. In a large skillet heat olive oil over medium-high heat. Add the onion and bell pepper and saute for 4-5 minutes until softened. Remove to a large bowl.

  3. Add the bacon and sausage and cook until the mixture is browned and crispy. Drain the mixture to remove the fat.

  4. In the large bowl with the onion/bell pepper mixture add the eggs, hash browns, cheddar cheese, Jarlsberg cheese, cottage cheese and sour cream. Mix until well combined.

  5. Stir in the bacon/sausage mixture.

  6. Scoop the mixture into the baking dish and bake for 40 minutes until golden on top and the casserole is set. Let stand for 10 minutes before serving.

  7. Top the casserole with some chopped fresh chives.
