Brunch Egg and Cheese Casserole

Whenever I think of a breakfast casserole, this is the first one that comes to mind. With its two rich cheeses and just the right amount of chiles for some kick, it's been a favorite for a long time.

Ingredients

  • 1 pint cottage cheese
  • 1 pound shredded Monterey jack cheese
  • 1/2 cup butter, melted
  • 10 large eggs, beaten
  • 1/2 cup flour
  • 1 teaspoon baking powder
  • 1 can chopped green chiles
  • dash salt

Instructions

  1. Preheat oven to 400F degrees.
     
  2. Combine melted butter and beaten eggs together.
     
  3. Add cheeses and chiles and mix well.
     
  4. Add flour, baking powder, and salt and combine thoroughly.
     
  5. Spread mixture evenly in a 9"x11" greased baking dish and bake at 400F degrees for 15 minutes.
     
  6. Reduce heat to 350F degrees and continue baking for 35-40 minutes.

I make a similar dish, it is English, Cottage Cheese Pancakes, I can't imagine this lasting more than a meal, it is light, remember there is very little flour in it. I use Light and Lively Cottage Cheese and serve it with Maple Syrup.

@mary2: Yes, you are correct. The servings would be quite small if you cut this dish into 20 squares. It's important to keep this in mind if you intend on serving this casserole as a main dish. You may want to make more than 1 serving per person in that case.

In order to get 20 servings from a 9X11 dish, the individual servings would be very small indeed.

Hello mary2, Thanks for the suggestion, yes Crafter many of these recipes are reader submitted and have larger serving sizes occasionally. You can easily halve this or even cut it down to a quarter of the size. Thank you all for the comments and suggestions.

The recipe states that it provides 20 servings, but it can easily be halved and is good the next day.

You must think some of us run a boarding house for the large amounts of ingred. you state needed.
