The Best Zucchini Bread

This all-star, easy to follow bread recipe is a perfect treat for the family. Moist and full of flavor, it is made with cinnamon and ginger to give it a spicy yet sweet taste. Sprinkle on powdered sugar and see for yourself why the Best Zucchini Bread is actually the best.

Ingredients
  • 1 cup sugar
  • 2 eggs, beaten
  • 2 teaspoons vanilla extract
  • 3 cups grated fresh zucchini
  • 2/3 cup coconut oil or melted unsalted butter
  • 2 teaspoons baking soda
  • pinch of salt
  • 1/2 teaspoon all spice
  • 2 teaspoons cinnamon
  • 1 teaspoon dry ginger
  • 3 cups all-purpose flour
  • 1/2 cup roughly chopped walnuts
  • 1/3 cup dry cranberries
  • 1/3 cup raisins
Instructions
  1. Preheat the oven to 350 degrees F (175C).
  2. In a large bowl mix together wet ingredients: sugar, eggs, vanilla, grated zucchini.
  3. In another bowl mix dry ingredients: baking soda, salt, spices, dry fruits, nuts and flour.
  4. Mix dry ingredients into wet ingredients. Add 1/3 of dry ingredients to wet ingredients each time.
  5. Transfer batter to 9”x13” oiled, oven safe dish.
  6. Bake for 50 minutes to 1 hour. Check if the bread is done after 50 minutes or until a wooden pick inserted into the center comes out clean.
  7. Cool the bread for 10 minutes. Then remove from the pan and place on wire rack to cool thoroughly.
