Gluten Free Bread

Ingredients
  • 1 3/4 c buttermilk
  • 1 t vinegar
  • 4 egg whites
  • 2 c brown or white rice flour
  • 1 1/4 c tapioca flour
  • 1 1/2 t dark brown sugar
  • 3 1/2 t xanthum gum
  • 1/2 to 1 1/2 t. salt to taste
  • 4 1/2 t active dry yeast
Instructions

Use machine's rapid-bake setting in making this loaf. For the first five min. or so of the mixing cycle, scrape down the sides of the baking pan with a rubber spatula to make sure the soft dough blends properly.
