Cranberry Fruit Nut Bread

Ingredients
  • 1 cup (115 g) cranberries, coarsely chopped
  • 1/2 cup (75 g) chopped nuts
  • 1 Tb. grated orange peel
  • 2 cups (250 g) all-purpose flour
  • 1 cup (200 g) sugar
  • 1 1/2 teaspoons Baking Powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 Tbsp. shortening
  • 3/4 cup (175ml) orange juice
  • 1 egg, well beaten
Instructions

Preheat oven to 350F (180C). Generously grease and lightly flour a 9x5 loaf pan. Prepare cranberries, add orange peel and nuts, set aside. Mix together dry ingredients, cut in shortening. Stir in orange juice, and egg, mixing just until moistened. Fold in cranberry mixture. Spoon into prepared pan. Bake 60 minutes, or until wooden pick inserted into center comes out clean. Cool on rack 15 minutes. remove from pan, cool completely. Wrap and store at least over night. Makes one loaf.
