Abobora Refogada Brazilian Stewed Pumpkin

This is one of the more unusual pumpkin recipes I've seen, and is sure to be unlike anything you've ever eaten before. Serve stewed pumpkin at your next dinner party and astonish your guests!

Ingredients

  • 1 pumpkin, seeded, peeled and cut into 1 in square pieces
  • 2 cooking oil
  • 1 clove garlic, minced
  • 2 scallions, minced
  • salt and pepper to taste

Instructions

1. Place the pumpkin, butter, garlic and scallions in a saucepan. Cook over medium heat, stirring, until the butter melts.

2. Cover, reduce the heat and cook until the pumpkin is fork tender. Stir the mixture occasionally so that it does not stick. Season and cook for 3 more minutes. Serve warm.

I think I don't trust recipes that have such obvious errors. Also, with just the butter and oil and no other liquid, I'm wondering why it is called Brazilian Stewed Pumpkin. Perhaps a lot of moisture comes out of the pumpkin when it's cooking, but I think I'll try to find another recipe for this item.

2 WHAT cooking oil? Also butter is not listed in the ingredients. Please clarify amounts and ingredients.
