Chop n' Drop Beef Stew

Easy one dish meals, like this Chop n' Drop Beef Stew, are great for cold winter days. Simply "chop n' drop" the ingredients into a large pot and let it cook! Serve with rice or just as is.

Ingredients
  • 2 tablespoons olive oil
  • 1 pound stew beef, cubed and dredged in flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 cups water
  • 1 teaspoon Dijon mustard
  • 2 teaspoons thyme, chopped
  • 1 bay leaf
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon brown sugar
  • 2 celery stalks, diced
  • 1 large onion, diced
  • 1 small turnip, cubed
  • 6 small potatoes, cubed
  • 2 carrots, sliced
  • 2 parsnips, sliced
  • 1/3 cup peas
  • 1/3 cup corn
  • 1/3 cup beans
  • 1 tablespoon all-purpose flour (optional)
Instructions
  1. Heat olive oil in large stock pan and sear beef until deep brown. Season with salt and pepper.
     
  2. Add water, mustard, thyme, bay leaf, Worcestershire sauce and brown sugar. Once the mixture comes to a boil, cover and turn very, very low and allow to simmer at least 2 hours, adding a little water now and then if the liquid if needed.
     
  3. Add celery, onion, turnip, potatoes, carrots, parsnips, peas, corn and beans. Allow vegetables to cook very slowly (about 1 hour) until tender.
     
  4. If gravy is too watery, stir in all-purpose flour to thinken the mixture.
