Lemon Bars

Ingredients
  • 1/4 cup powdered sugar
  • 1/2 cup butter
  • 1 beaten egg
  • 1 cup sugar
  • juice of one lemon
  • grated rind (dark yellow) of one lemon
  • 1/4 cup flour
  • 1/2 tsp baking powder
Instructions

Combine flour, powdered sugar and butter. Mix like pie crust, pat into 8x8" pan. Bake 15 minutes at 350. Mix together egg, sugar, lemon juice, lemon rind, flour and baking powder. Pour on baked crust and bake 20 minutes at 350. Sprinkle top with powdered sugar. If you are really fond of lemon, you can double the lemon juice and add extra flour to compensate.
