Master Baking Mix

Ingredients

  • 5 pounds flour
  • 3/4 cup baking powder
  • 3 Tbsp salt
  • 1 Tbsp cream of Tartar
  • 2 pounds vegetable shortening
  • 4 cups dry milk powder

Instructions

Yield: 8 lbs of mix.. Stir together flour, baking powder, salt and cream of tartar. Cut in shortening to the consistency of cornmeal. Stir in dry milk. Store in a covered container at room temperature. Will keep for months. When using this mix, pile lightly into a cup and level off with a spatula.

What is vegetable shortening ? Is it white margarine or yellow baking margarine or completely something else ? I'm in South Africa & the only shortening I know of is from animals . Thanks Hanko

I would go to an Asian food market, if you can find one, and ask there - many Indians are vegetarian or part-time vegetarians, and I am sure they will have vegetable-based shortening or oils. The animal-based shortenings aren't good for this mix because you would have to refrigerate it to keep it from going rancid.

Vegetable shortening is a solid fat made from hydrogenated vegetable oil. We use products such as Crisco in the U.S.
