Soy Sauce Chicken

Ingredients
  • 2 1/2 cups soy sauce
  • 2/3 cup water
  • 1/4 cup dry sherry
  • 1 cup sugar
  • 3 whole star anise
  • 1 tsp sesame oil
  • 1 tsp Szechuan peppercorns
  • 3 pounds frying chicken
  • 1 scallion shredded
Instructions

Place all ingredients except chicken and scallion in large pot. Bring to a boil, stirring. Place chicken in pan, breast down. Reduce heat and continue simmering for 15 minutes. Turn chicken over and continue cooking for another 30 minutes, turning and basting with pan juices occasionally. Remove from heat and allow chicken to cool in the juices till it's cool enough to handle. Carve into serving pieces. Garnish with shredded scallion.
