Saganaki (fried Cheese)

Have you ever been to a Greek restaurant or Coney Island and saw flaming cheese and servers yelling "OPA!"? Saganaki cheese is the authentic Greek appetizer served hot and flaming. Now you can make it at home with this easy recipe.

Ingredients

  • 1/3 pound Kefalotyri or kasseri cheese
  • 2 tablespoons butter
  • juice of 1 lemon

Instructions

  1. Cut the cheese into bite-sized cubes.
     
  2. Melt the butter in a "saganaki" (or a frying pan) and fry the cheese on all sides until crusty and chestnut colored.
     
  3. Yell "opa!"
     
  4. Squeeze lemon juice over the cheese and serve with bread, other appetizers, and wine or ouzo.
