Roast Beef Fillo Cups

This savory little appetizer can't be beat. The dill is complemented nicely by the horseradish, and they really bring out the flavor of the beef. Serve them at your next gathering and watch them disappear!

Ingredients

  • 1 8-ounce package cream cheese, softened
  • 1/3 cup mayonnaise
  • 3 tablespoons prepared horseradish
  • 1/2 teaspoon dried dill weed
  • 2 cups chopped deli roast beef
  • 1 red bell pepper, diced
  • 5 packages (15 count each) mini fillo pastry cups
  • 1/2 cup chopped flat-leaf parsley

Instructions

  1. In medium bowl, beat cream cheese until fluffy.
     
  2. Gradually add mayonnaise and horseradish; beat until smooth.
     
  3. Stir in dill weed.
     
  4. Add roast beef and red bell pepper. Cover this mixture and refrigerate until time to serve.
     
  5. Using a small teaspoon, fill each pastry cup with some of the roast beef mixture.
     
  6. Place on serving platters and sprinkle with parsley. Yields about 60-75 cups.
