Fresh zucchini recipes are great for the summer, but you'll want to have these year round. Poor Man Zucchini Fritters are great for a party or as a little snack before dinner. Made with fresh ingredients, their bold flavor will wow your guests.

  • 2 medium zucchinis
  • 2 eggs
  • 1/4 cup all purpose flour
  • 1 garlic clove
  • 1/4 cup cilantro
  • 1 pinch cayenne pepper
  • 1/3 cup vegetable oil
  • salt and pepper to taste
  1. In food processor blitz garlic clove then add cilantro and blitz for 10 seconds. Then add zucchinis and finely chop them.
  2. Transfer to large bowl and add eggs, flour, salt, pepper and cayenne pepper. Mix well.
  3. Preheat large skillet to medium high heat. Add oil and fry the fritters for about 2-4 minutes per side or until beautiful and golden. Serve hot and enjoy!
